Early bird gets the worm!

Happiness is waking up early... stretching outside and feeling the cool morning air. Yeah, only two of those things happened this morning, can you guess which two? If you guessed everything but waking up early, you are a winner! I struggle with waking up early during the week for work, so waking up early when I don't have to is even more of a struggle. I love the idea of waking up early, but the action of waking up early no so much.
Today's workout is another one of my favorites, solely because there is no HIIT circuit. Don't get me wrong HIIT is a great workout, it just is not my favorite. After yesterday's workout it is difficult to lift my arms above my head, but it's a good soreness. Focusing on the back and biceps with core workouts thrown in my muscles were burning today. Feels good to have a rest day tomorrow!

Sunday's are meal prep day!! Therefore, I think we can dub Sunday's as grocery haul/meal prep Sunday. I LOVE sharing recipes, tips and tricks when it comes to meal prepping. One of the biggest things that helps me is making all my snacks "grab & go". For instance when I get grapes at the store I automatically will split up servings in snack bags so all I have to do is grab & go-- no thinking, just healthy eating!
Today I was feeling super lazy, so I decided to get my groceries delivered right to my door. Yes, I am sure you shaking your head thinking how hard is it to go out and get your own damn groceries? Well, when your like me grocery shopping could turn into hours of going up and down the aisle looking at all the things I could be getting. This week's meal plan inspired by Pinterest as always. Breakfast will consist of either overnight oats or chicken sausage & spinach egg cups with a side of fruit. Lunch and dinner's will be either buffalo chicken or beef taco bowls with a side of veggies. I have plenty of snack options but my go to's are grapes & cheese stick, apple with peanut butter, and lastly hard boil egg and veggies. I will leave the links down below for this week's recipes.

I'm excited to be on this journey and super excited to crush this week. Each day will get easier, and next thing you know a new lifestyle will be achieved. I am always looking for new things to try, If you try any good healthy recipes send them my way!

Birthday Cake Protein Overnight Oats
Craving a donut in the morning, this oats can cure that cravings. These are awesome to cure the sweeth tooth. The only modification I make is add a scoop of protein, my favorite at the moment is the birthday cake protein from Unico Nutrition.

Chicken Sausage & Spinach Egg Cups
This recipe is curated by yourself truly. I do about 6 egg cups, taking two in the morning three days a week. You'll start off with eggs (1:1 ratio), spinach, and chicken apple sausage (cooked). Mix all the ingredients in a bowl, then divvy the mixture up between the desired number of egg cups. Sprinkle with freshly grated parmesan cheese and pop in the oven (400 degrees) for about 20 minutes or until golden brown.
Shredded Buffalo Chicken
Instant Pot is a life saver! This is super easy to make and can also be done in a slow cooker if you do not have an instant pot.I pair the chicken with brown rice and a mixture of my favorite veggies.

Taco Bowl
No recipe needed for this one, basically ground beef seasoned with taco seasoning. Paired with rice, black beans, corn and peppers. Optional toppings: sour cream, cheddar cheese, salsa & avocado.
